Sometimes Simpler is Better
This is what I made for dinner tonight. I find that in the Winter, I go for things that are easy to make. I don't want to chop, bake, season, or broil. I want to throw something in the oven and leave it until I hear a ding! Straight from the ding! to my mouth please. I always start strong and make hearty, stick to your ribs foods when it starts getting colder, to help build up a little body fat for the freezing months ahead. But after a month or two of leaving work late, waking up in the dark and getting home in the dark, I am tired. Ding! straight to my mouth please.
But then it starts getting warm again! And today was warm. Well, warmer. And I begin thinking of food the way I love to eat it, fresh, simple, and light.
And that's what tonight's meal was: fresh tomato, avocado, sunflower seeds, greens and chicken. Delicious. Sometimes I out-do myself and deserve many pats on the back.
And with salad for dinner, that leaves room for....CAKE!
Ah yes, nothing says you did a good job with your healthy dinner like a slice of chocolate cake. But no icing for this girl. Remember the icing fiasco?
