I lovingly made each meatball into the exact size and shape I desired, a perfect bite-sized morsel of heaven on your tongue. I put these into the oven. Because they do not take that long to cook, I decided it was time to start the sauce.
I gathered up my organic honey, the organic ketchup, my garlic that I had so precisely minced. I threw the garlic into a saucepan to brown a little. I added the ketchup and honey, all the while making sure it is all coming together nicely. And then: oh shit! The soy sauce! I go into the fridge to grab the soy sauce and wait...where is it? Hmm..malt vinegar, balsamic vinegar, REGULAR vinegar. What the fuck is going on with all the vinegar?? We don't even use this stuff!!
Alas, there is no soy sauce. Commence mini mental breakdown. That's correct, you did not hear me wrong. I was so tired and not feeling great at that point, and so excited for the meatballs that I just wanted to sit down and cry it all away. Of course Dave is being his awesome self telling me that they will taste great! Really they will be good!! And I am all "No! They WON'T! Ugh, smell the nasty ketchup smell!! Do you smell it??!! Because that is the groseness that we have to eat now!" Wah wah I know.
So after Dave slowly backs out of the room, never taking his eyes from my volatile body, he reassures me from afar that he KNOWS I will do my magic and make them taste really good. And I did.
And here it is for you, for your eating pleasure:
Gone Awry Honey Garlic Meatballs
For the meatballs:
1 pound of extra lean ground beef
1 clove of garlic
1/4 of an onion
1 egg
Pinch of Salt
Tbsp of pepper
2 tbsp of garlic powder
Breadcrumbs
Mince garlic and onion and throw them into a plastic bowl. Throw in all other ingredients together, except for the breadcrumbs and egg. Get your hands dirty! Mix all ingredients together well by kneading the meat and mashing it all together. Once everything is mixed to your desire, crack the egg and add some breadcrumbs. Mix some more. This is the part where you have to feel it binding together. Keep adding breadcrumbs until mixture sticks together without much effort.
Preheat the oven to 400 degrees.
On a cookie sheet, add a minuscule amount of extra virgin olive oil, just to grease the pan. Shape meatballs into a ball shape, about a tablespoon worth of meat. Makes around 20 meatballs.
Stick them in the oven for 12-15 minutes, turning once for even cooking.
For the sauce:
3/4 cup of ketchup
1/2 of honey
4 cloves of garlic, minced.
Garlic powder
Black pepper
In a saucepan gently heat a bit of butter on low heat. You don't need a lot. Add the minced garlic and gently fry until brown. Add the ketchup and honey. If you so choose to have a mini breakdown at this point it will add to the flavor. Make sure to keep the heat low as it will splash and begin to burn right away. Make sure to stir continuously as the honey will burn. Once it seems like it has all come together (you will know, it will seem watery) add a handful of garlic powder. It seems like a lot but will definitely add to the flavor. Add desired amount of black pepper.
Stir constantly for a minute and then turn up the heat, but not by much. It just has to simmer gently for 2-3 minutes until it is hot and all the flavors have had time to blend together. Once the sauce begins to thicken slightly, take it off the heat and add the meatballs directly to the pot. Stir until well coated and serve!
